William Smith purchased the aerated water plant of C.R. Goulding & Co. in 1866 after which Goulding was thought to have moved to Australia.
W. Smith & Co. manufactured lemonade, soda water, ginger beer, cordial and cider. Porter, ale, wine and spirits were purchased in bulk and bottled in the premises.
Advertisements were placed in 'The Wellington Independent' in November 1866 and in the 1867 'Wellington Almanac and Diary' advertising an array of refreshments as follows:
